The stamp on a traditional Dutch Gouda farmer’s cheese is in the shape of a barrel and guarantees that you are holding the only genuine Gouda farmer’s cheese in your hands.

Every Gouda farmer’s cheese has a unique taste. Multiple aspects influence the taste of the typical Dutch hard cheese. The milk obtains its taste from the grass the cows eat, and the area they live in. Besides the grass of the pastures, the cows eat different herbs. The slightest climate difference in the Dutch countryside affects the taste of the cheese. Other than the milk, every cheese maker has a different recipe. After the cheese-making process, the cheese-maker matures the cheese on wooden boards at the cheese farm.

There is Dutch Gouda factory cheese and Dutch Gouda farmer’s cheese.

Gouda cheese is world-famous. There is a factory version and a handmade cheese farm version. Like with many crafts, authentic cheese-making is an art. The main difference between a Dutch factory cheese and a farmer’s cheese is the milk used in the cheese making. Due to food safety requirements, cheese factories use pasteurised milk. The cheese farmer makes the farmhouse cheese from very, very fresh milk. Early morning the dairy farmer collects the milk from the cow and immediately uses it for cheese making. A real – Gouda- farmer’s cheese is made from raw, non- pasteurised milk.

Is all Gouda cheese Dutch Gouda?

Cheese factories all over the world produce and sell Gouda cheese (the origin of Gouda cheese), and this production takes place in cheese factories from China to the United States. A cheese with a Gouda or Holland label, therefore, says nothing about its quality or whether it is actually made in the Netherlands!

We know we are preaching to the choir! But although we make farmers’ cheese, we have of course also tasted factory-made Gouda from various countries. In short, there was Gouda cheese among them that shouldn’t even be labelled with the word cheese!

Guaranteed traditional speciality.
To guarantee the quality of farmer’s cheese, various quality marks are used that show whether cheese is really farmer’s cheese. Farmers’ cheese is a European-protected name by means of GTS: Guaranteed Traditional Speciality. The most important characteristics are that the cheese is made of raw milk on the farm which gives the Gouda farm cheese its rich taste sensation.

Intangible heritage.
Since 2017, the craft of making farm cheese has been included in the National Inventory of Intangible Cultural Heritage in the Netherlands. This inventory is meant to support communities to make traditions future-proof. So we keep the tradition of making farm cheese alive. So that we can continue to enjoy the taste of real cheese in the future!
