Artisanal Dutch Gouda Cheese: Genuine traditional Gouda in Spain
Craxi queso is a cheese shop in Malaga, Spain specializing in artisanal Gouda cheese from Holland. Most people have heard of Gouda cheese or have eaten it, but do they know all the ins and outs?
The history of Gouda cheese is very interesting. This popular cheese is the third most consumed cheese in the world.
In the Netherlands, 650 million kilos of Gouda cheese are produced every year. Most of it is produced industrially from pasteurised milk, but there are still 280 farmers throughout the country who produce the classic artisanal Gouda cheese from raw milk.
Overview of the most consumed cheeses in the world.
- Mozzarella.
- Parmesan.
- Gouda.
- Cheddar
To delve deeper into this, let’s first distinguish between industrial Gouda cheese and artisanal Gouda (boerenkaas) cheese.
Industrial Gouda versus artisanal Dutch Gouda
The main difference between industrial and artisanal Dutch Gouda:
- Industrial – Made with pasteurized milk.
- Artisanal – Made with raw milk.
Gouda is one of the world’s most famous cheeses, but there are important differences between “generic” Gouda-style cheeses made worldwide and the protected Dutch versions Gouda Holland (industrial) and Artisanal Gouda (Boerenkaas).
✅ In short:
- Generic Gouda → Industrial, made worldwide, milder and less complex.
- Gouda Holland → Industrial, but must be made in the Netherlands with Dutch milk, more authentic flavor.
- Gouda Artisanal → Traditional farmhouse raw-milk Gouda, artisanal, deeply flavorful, and truly tied to Dutch countryside.
If you’re wondering why this well-known cheese, originally from Holland, can be produced all over the world, the answer is simple: “Gouda” is not a protected name!
Here’s a clear side-by-side comparison of the three types of Gouda:
| Feature | Industrial Gouda Worldwide | Industrial Gouda Netherlands | Artisanal Gouda (Boerenkaas) Netherlands |
|---|---|---|---|
| Milk source | Cow’s milk from anywhere, pasteurized & standardized | Dutch cow’s milk, pasteurized | Raw milk (mostly cow, sometimes goat/sheep/buffalo) from the farm’s own herd |
| Production scale | Large, industrial, global factories | Large, industrial, but within the Netherlands | Small-scale, artisanal, individual farms |
| Regulation / Protection | “Gouda” is generic; no EU protection | Protected names possible: Gouda Holland (PGI), Noord-Hollandse Gouda (PDO) | Gouda Artisanal, Boerenkaas (TSG) – strict EU protection, raw milk required |
| Flavor | Mild, creamy, slightly sweet; uniform | Ranges from mild to nutty & complex depending on age | Much more intense, complex, farm-specific; flavors vary by farm and season |
| Texture | Soft to semi-hard, smooth | Semi-hard; can age into crumbly, crystalline textures | Variable; younger cheeses creamy, older ones dense & crystalline |
| Aging | Typically young (4–12 weeks) | From jong (young, 4 weeks) to overjarig (1+ years) | Same range, but with more depth of flavor from raw milk |
| Tradition | Modern global cheese, Gouda-style only | Rooted in Dutch tradition but industrialized | Direct continuation of medieval Dutch farmhouse methods |
| Availability | Supermarkets worldwide | Widely available, especially in Europe | Rare, ~± 280 Dutch cheese farms still make it |
| Price | Usually inexpensive | Moderate, varies by age | Premium, artisanal pricing |

Gouda cheese market in the Netherlands

There is no country in the world where people don’t know Gouda cheese. In fact, it is so well known that most people don’t even know that Gouda is a town in the Netherlands. Gouda has become a brand name.
In the town of Gouda in the Netherlands, there have been cheese markets since the beginning of the 14th century. The raison d’être of this market was that dairy farming was the main livelihood.
The name of this delicious cheese is named after the town where this Dutch gold was traded. Gouda was the centre of the cheese trade; buying, selling, and exporting took place mainly in this town. The name Gouda cheese soon became popular and has remained so ever since.
Some other famous Dutch cheeses that have been made for hundreds of years and that also bear a city name are, for example, Edam and Leyden cheese (Leidse kaas).
Gouda Artisanal – Boerenkaas
- Origin: Boerenkaas literally “farmer’s cheese,” produced on Dutch cheese farms using traditional, small-scale methods.
- Milk Source: Made from raw milk (usually cow, but can also be goat, sheep, or buffalo) from the farm’s own herd.
- Production: Handmade by farmers, using centuries-old artisanal methods.
- Aging: Natural aging on wooden shelves, often longer, producing intense flavors.
- Flavor/Texture: Stronger, more complex, with greater depth of flavor due to the raw milk; much less uniform than industrial Gouda.
- Protection: TSG status ensures it’s farm-produced, raw-milk, and authentically Dutch.
Craxi artisan farmhouse cheese is a cheese that is actually made at a cheese farm in the Netherlands in a traditional, artisanal way. The cheesemaker uses fresh raw milk, directly from the cows. This milk is not heat-treated, as is the case with factory-made cheese. The bacteria still present in this “raw” milk give farmhouse cheese its characteristic and powerful flavour.
Farmer’s cheese never tastes exactly the same. This is because it is a pure natural product. Differences in the feed, the type of soil, the grass, the recipe, and the method of preparation result in the variation in taste.
Artisan Dutch farmer’s cheese is a traditional and authentic product. It is prepared in the traditional way. To a large extent, this is still done by hand. The farmers work with dedication and feeling for the cheese, but with respect for modern hygiene standards.
Dutch (industrial) cheese – Gouda Holland
The Netherlands became famous for its cheese, especially this type of cheese. Since the name “Gouda” was never protected, industrial producers worldwide—from the U.S. to Poland—began making their own versions, often with lower quality. To address this, the EU granted “Gouda Holland” a protected geographical indication in 2010. This label guarantees the cheese is made and matured in the Netherlands with Dutch milk. This Dutch industrial version (pasteurized milk) can be recognized by its EU logo featuring tulips, milk jugs, and windmills.
